Vegetable Tamarind Soup (Sayur Asem) is indeed one of the popular and delicious dishes in Indonesian cuisine. The fresh and sour taste from the mix of ingredients makes it a refreshing choice. Here is the basic recipe to make Vegetable Tamarind Soup:
Ingredients:
200 grams of yardlong beans, cut into pieces
100 grams of boiled and shredded melinjo
1 piece of sweet corn, cut into pieces
2 pieces of chayote squash, cut into cubes
2 bay leaves
2 kaffir lime leaves
2 stalks of lemongrass, bruised
3 red chilies, thinly sliced (according to taste)
2 liters of water
2 tablespoons of grated palm sugar
Salt to taste
Ground Spices:
4 candlenuts, roasted
3 large red chilies
4 shallots
3 cloves of garlic
1 teaspoon shrimp paste (terasi)
Cooking Steps:
Sauté the Ground Spices: Sauté the ground spices with a little oil until fragrant.
Boil the Vegetables: Put water into a pot, boil the vegetables (yardlong beans, melinjo, corn, and chayote squash) along with bay leaves, kaffir lime leaves, lemongrass, and sliced red chilies.
Add the Spices: When the vegetables are halfway cooked, add the sautéed spices to the pot. Stir well.
Add Palm Sugar and Salt: Put in grated palm sugar and salt according to taste. Stir again and let the vegetables cook thoroughly.
Add Red Chilies (Optional): If you want the Vegetable Tamarind Soup to be spicier, add sliced red chilies and cook briefly until the chilies are done.
Adjust the Taste: Taste and adjust the flavor by adding more sugar, salt, or chilies according to your preference.
Serve: Remove the Vegetable Tamarind Soup from heat and serve it in bowls. It can be served with steamed white rice.
