How to make a Mango Cake

- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 1/2 cups diced ripe mangoes

**For Mango Puree:**

- 1 1/2 cups diced ripe mangoes
- 2 tablespoons sugar
- 1 tablespoon lemon juice


1. **Preheat Oven:**
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. **Prepare Mango Puree:**
In a blender, combine diced mangoes, sugar, and lemon juice. Blend until smooth to create mango puree.

3. **Make Cake Batter:**
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

4. **Cream Butter and Sugar:**
In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.

5. **Add Eggs and Vanilla:**
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

6. **Alternate Mixing:**
Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Begin and end with the dry ingredients.

7. **Fold in Mango Puree and Diced Mangoes:**
Gently fold in the mango puree and diced mangoes until well combined.

8. **Pour Batter into Pans:**
Divide the batter evenly between the prepared cake pans.

9. **Bake:**
Bake in the preheated oven for approximately 25-30 minutes or until a toothpick inserted into the center comes out clean.

10. **Cool:**
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

11. **Frost (Optional):**
Once cooled, you can frost the cake with your favorite frosting or enjoy it plain.

12. **Slice and Serve:**
Slice the mango cake and serve. Enjoy your delicious homemade mango cake!
