The Story of Sarma: The origins of sarma can be traced back to the ancient Roman period. It was known as a dish where various ingredients were wrapped in grape leaves in many parts of the ancient Roman Empire. This delicious dish has undergone changes over time in different regions and cultures, acquiring different names along the way.
In the Middle East and the Ottoman Empire, sarma is made by stuffing grape leaves or cabbage leaves with a mixture of rice, meat, spices, and other ingredients. Today, this tasty dish is widely consumed in many Middle Eastern countries, the Balkans, and especially in Turkey.
Making Sarma: Ingredients:

  • Grape leaves
  • Optionally, cabbage leaves
  • Rice for the filling
  • Ground meat or a meatless alternative (such as lentils)
  • Onion
  • Tomato paste
  • Olive oil
  • Salt, pepper, and other spices

Instructions:

  1. Grape leaves are soaked in water with vinegar until they become soft.
  2. The filling is prepared: Rice is thoroughly washed, mixed with ground meat or a meatless alternative, finely chopped onion, tomato paste, olive oil, salt, and spices.
  3. A grape leaf is spread on a flat surface, a portion of the filling is placed on it, and it is rolled into a cylindrical shape.
  4. Rolled sarma is arranged in the bottom of a pot in an orderly manner.
  5. Sliced tomatoes and olive oil are added on top.
  6. Water is added just enough to cover the sarma.
  7. It is cooked over medium heat until the water is absorbed.

Sarma is a indispensable delight on family tables in many cultures and is usually shared with loved ones on special occasions, holidays, or private gatherings.
