4-5 slices of bacon or pancetta, diced

1/2 cup grated Parmesan cheese

Instructions:


Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente (usually about 8-10 minutes). Reserve about 1/2 cup of pasta cooking water, then drain the spaghetti.

Prepare the Sauce: While the pasta is cooking, heat a skillet over medium heat. Add the diced bacon or pancetta and cook until it becomes crispy, about 5-7 minutes. Remove excess fat, leaving about a tablespoon in the skillet.

Whisk the Eggs and Cheese: In a bowl, whisk together the eggs, grated Parmesan cheese, minced garlic, and a generous amount of black pepper.

Combine Everything: Add the cooked and drained spaghetti to the skillet with the bacon (off the heat). Toss to coat the spaghetti with the bacon fat.

Add the Egg Mixture: Quickly pour the egg and cheese mixture over the hot spaghetti, tossing continuously. The heat from the pasta will cook the eggs, creating a creamy sauce. If it seems too thick, you can add a bit of the reserved pasta cooking water to reach your desired consistency.

For the grilled chicken:


2 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt, pepper, and Italian seasoning (or dried basil and oregano) to taste

Instructions:


For the grilled chicken:

Preheat your grill or grill pan over medium-high heat.
Rub the chicken breasts with olive oil and season them with salt, pepper, and Italian seasoning or dried herbs.
Grill the chicken for about 6-7 minutes per side or until it's cooked through (internal temperature of 165°F or 74°C).
Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
For the pasta:

Cook the pasta according to the package instructions until it's al dente. Drain and set aside.
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant.
Pour in the heavy cream, bring it to a gentle simmer, and let it cook for 2-3 minutes while stirring.Gradually add the grated Parmesan cheese, stirring constantly, until the sauce thickens and the cheese is fully melted.

Season the sauce with salt and pepper to taste.
Add the cooked pasta to the skillet and toss it in the creamy sauce until well coated.
Serve the creamy garlic Parmesan pasta on plates, and top each serving with the grilled chicken slices.

Garnish with fresh chopped parsley.
