**Ingredients:**

- 2 cups ripe mangoes, peeled and diced
- 1/2 cup sugar (adjust to taste)

- 1/4 cup water
- 1 cup heavy cream
- 1 teaspoon vanilla extract

**Instructions:**

1. **Prepare Mango Puree:**
In a blender, puree the diced mangoes until smooth. Add sugar and lemon juice, blend again, and taste to adjust sweetness. Set aside.

2. **Bloom Gelatin:**
In a small bowl, sprinkle gelatin over water and let it sit for a few minutes until it absorbs the water. Then, gently heat the gelatin mixture in a microwave or on the stove until it becomes liquid. Allow it to cool slightly.

3. **Combine Mango Puree and Gelatin:**
Mix the gelatin into the mango puree and ensure it's well incorporated. Set aside.

4. **Whip Heavy Cream:**
In a separate bowl, whip the heavy cream until stiff peaks form. Add vanilla extract during the whipping process.

5. **Fold in Mango Mixture:**
Gently fold the mango-gelatin mixture into the whipped cream. Use a spatula and make sure to incorporate the mango mixture thoroughly without deflating the whipped cream.

6. **Chill:**
