Coconut Chickpea Curry



Ingredients:

1 can of chickpeas, drained and rinsed

1 onion, diced

2 cloves of garlic, minced

1 tablespoon of curry powder

1 teaspoon of turmeric

1 teaspoon of cumin

1 can of coconut milk

1 cup of vegetable broth

2 cups of spinach

Salt and pepper to taste

Fresh cilantro for garnish


Instructions:


In a large pan, sauté the onion and garlic until softened.

Add the curry powder, turmeric, and cumin, stirring until fragrant.
